Shou Mei White Tea
Shou Mei ("Longevity Eyebrow") is a traditional Chinese White Tea made from later-season leaves and tender buds. In the cup it becomes a softly golden tea with a mellow sweetness and gently nutty depth. Due to its simple drying and withering process, Shou Mei is often described as having naturally higher levels of antioxidants and polyphenols, while generally offering a lower caffeine experience compared with many other teas.

Steeping Guide:
Use 3-4 grams (1-2 tsp to taste)
Pour 175-185F water temperature (1-2 minutes off the boil) over leaves and immediately pour off - this wakes up the leaves. Tip: save this water to cool and use to water your houseplants.
Steep for 1-2 minutes. Leaves may be re-steeped multiple times, adding 30 seconds onto each infusion. This is a very traditional way of steeping white tea. Feel free to experiment to find your perfect cup.
